Ceramics are noticeably personal, expressive and photogenic. But ceramic tableware needs to be more than that: it needs to be durable, as non-porous as possible and dishwasher-safe. It shouldn’t have to be handled with extreme care, as that’s not normally possible in the kitchen. Ceramics should underline the work of the chef, not outshine it. This is best achieved by trusting in the cooperation with ceramicists from Germany and the rest of Europe.
But there’s no reason why you shouldn’t use a plate or bowl from Japan as long as it’s chosen carefully.  Alternatively, you can opt for the product of an exclusive collaboration – a very dynamic process. Your guests will sense the difference.
